La Sterne caugek (Thalasseus sandvicensis) est une élégante voyageuse des littoraux, reconnaissable à sa silhouette élancée et à sa calotte noire ébouriffée. Reconstitué selon le savoir-faire historique de Deyrolle, chaque spécimen capte la grâce de cet oiseau marin, mettant en valeur son plumage blanc et gris perle ainsi que la pointe jaune caractéristique de son long bec noir.
Surnommée « l'hirondelle de mer », la Sterne caugek est une pêcheuse spectaculaire : elle repère ses proies depuis les airs avant de plonger en piqué à toute vitesse, s'immergeant complètement pour capturer de petits poissons. Pour séduire sa partenaire lors de la parade nuptiale, le mâle lui offre élégamment un poisson fraîchement péché en guise de présent !
